Healthy Eats with Hungryroot - Spinach Artichoke Salmon & Shaved Brussel Sprouts

The mighty salmon, one of the best power fish out there in terms of health benefits...not a bad place for us to start. For our very first Hungryroot meal out of the gate, we opted to give this "superfood" a try. As with most fish, it can sometimes go either way (taste wise), so we figured if we landed a winner then it's probably smooth sailing from here on out. Luckily for us, it didn't fail to deliver. With this particular box, the salmon wasn't pre-cooked (for what I'd assume to be obvious reasons), but the prep time to table was still as easy as you'd expect. All in all, great start for our first "box" meal from Hungryroot.

*If you wanted to mimic this prep without the box you certainly could, with a few extra steps (make your own spin/artichoke sauce, etc), but clearly the convenience of the box here is a help.

Approx 30 min cook time | 630 cal | 2 servings (per meal box sheet)

Recipe Ingredients (from box): Salmon fillets | multicolored potatoes | Brussel Sprouts | Spin/art sauce mixture

Recipe Instructions: Preheat oven to 400, arrange racks on top + bottom thirds of oven; mix half the potatoes with 1 tbsp oil + salt/pep; place on a sheet pan, add to lower rack + roast 20-25 min until tender

Pat fish dry, line a sheet pan with foil, top each fillet with 1-2 tbsp sauce + salt/pep; bake on upper rack 10-14 min until firm + opaque

Meanwhile, heat 1 tbsp oil in skillet over med-high heat + cook brussels with salt/pep 5-6 min until tender, stirring minimally to ensure browning
