Healthier versions of your favorite treats, that taste great and provide you with that "snack" you crave...guilt free. These are super versatile in that you can add/subtract various ingredients to make these more/less healthy as your heart desires. Have fun with your combos and nail down an option you love the most!
INGREDIENTS 1 cup peanut butter 1/2 cup honey 2 tablespoons ground flax 1/4 cup chopped unsweetened dried cherries or cranberries 1/4 cup mini chocolate chips 1 1/2 teaspoons vanilla 1 1/2 cups to 2 cups old fashioned oats (optional add ins - chia seeds, shredded coconut, cacao nibs, cinnamon, sliced almonds etc) INSTRUCTIONS Stir peanut butter and honey together until smooth. Mix in ground flax and vanilla. Add chopped cherries, chocolate chips (and any other add-ins) stir until combined, and finally mix in oats. *if dough seems too sticky or to wet, adjust oats or peanut butter until you reach the right consistency. There is no right or wrong here! Roll "dough" into 1 to 2 tablespoon size balls and refrigerate until firm. Enjoy for 1 week in refrigerator or 3 months in the freezer.
